This Cheesecake with Raspberry Tuttafrutta is a real treat!
Great as a dessert or for a special snack.
Ingredients
180 g dry cookies 110 g butter (melted) 2 eggs 50 g sugar 250 g ricotta cheese 25o g mascarpone cheese 250 g spreadable cheese 1 pinch of salt 1 jar of Raspberry Tuttafrutta
Preparation
First let’s deal with the base of our cake.
Break up the cookies inside a mixer.
You must obtain a kind of fine flour; this way the base of your cake will be well compacted.
Take the melted butter and mix it with the cookie flour until it is completely absorbed.
Take a classic cake pan (26 cm diameter), butter and flour it, including on the edges.
Now be careful: line the base of the cake pan with a circle of baking paper and make it stick.
Also line the edges of the cake pan by cutting a strip or strips of baking paper.
This way you will have no problems when you go to unmold the cake.
At this point, pour in the butter and cookie mixture and spread it out well.
Help yourself with a meat tenderizer, if you have one, otherwise use the bottom of a pan and beat on the cake base to make it as firm and even as possible.
Store your base in the freezer, if you have room, or in the refrigerator.
In the meantime, let’s prepare the cream (ah also remember to turn the oven on to 180°) Crack the eggs and separate the yolks from the whites.
Whip the egg whites with a pinch of salt and set aside.
Beat the yolks with the sugar and then add the three types of cheeses, continuing to mix with electric whisks until you get a nice smooth cream without lumps.
Finally add the whipped egg whites and incorporate them in slow motions from the bottom to the top.
Take the cake base out of the refrigerator and pour in the cream, leveling it.
At this point place your cake in the oven at 180° for 45 minutes.
Take the cake out of the oven and let it cool.
Once cool, place the cake in a nice serving dish and take care of the filling.
We spread a 240 g jar of our Raspberry Tuttafrutta on top.
Of course, you can also choose other flavors according to your preferences, such as mango, berries or blueberries.
A couple of hours in the refrigerator and voila, the cake can be served!
